The Signature Darling & Co House Blend

Darling & Co has worked with local Brisbane coffee roasters Bellissimo to create a signature blend that consists predominantly of beans of Ethiopian and El Salvadorian origin. The blend is balanced and designed to taste wonderful in both black and milk-based coffee. We use this same coffee blend in our espresso martinis, with a butter-infused vodka for a divine flavour. So if your project takes all day and that 3pm coffee just isn’t quite cutting it, treat yourself to one of our espresso martinis for an extra caffeine kick – it’s five o’clock somewhere.


The Locally Sourced Milk

With coffee this good, we can’t help but be picky when it comes to choosing our milk. We source our milk from a local, family-owned dairy farm, Maleny Dairies. They pride themselves in producing milk that tastes the way it used to, and they have been doing so for fifteen years. Their delicious milk is the perfect complement to our signature coffee blend.


The Corporate Function

Nothing drives a corporate function quite like coffee. We have private function rooms that accommodate anywhere between 25 to 150 people, so no matter the size of your event, we have the seats (and the coffee) to accommodate you.

Quality cheese is our lifeblood, it makes us happy and it tastes simply divine. So, when we designed our menu, choosing the cheese was perhaps the most difficult (and rewarding) part.


Cheese unlike any you’ve tried before

Which cheese came out on top? Burrata – a specialty cheese originally from Apulia, Italy. It has a thin spun casing and a soft and creamy center, which oozes Stracciatella (a teased and stretched curd that is combined with fresh cream). This handcrafted delight is at its best served fresh alongside ripe heirloom tomatoes. So, apart from a sneaky slathering of salsa verde and a serving of focaccia, that’s exactly how Darling & Co’s Vannella Burrata is served!


Born in Italy, made in Sydney

The burrata on our menu comes from the Vannella Cheese Factory, which was born when Italian cheesemaker, Vito Minoia, made the decision to bring his expertise to Australia after a trip in 1999. But it wasn’t until 2004 that he, along with his family, opened their cheese factory in Cairns. Fast-forward to now, and Vannella operates out of their state-of-the-art factory in Sydney and although time has passed, Vito continues to use the methods he perfected as a teenager to produce this outstanding cheese. This is particularly evident with the burrata – with every single piece lovingly crafted by Vito himself. Talk about handcrafted!

Nobody smokes better than the house

At Darling & Co, we give this delicate dish the love it deserves with an intricate cooking method. First, the Huon Ocean Trout is cured in salt, sugar and citrus spices for a couple of hours. Next we wash and dry the fish before it’s laid on a pillow of ice and steaming wood chips and covered with plastic wrap. Before long, the Huon Ocean Trout gets its signature smoky flavour. Then, it’s in the pan for that delicious crispy skin before it’s served with horseradish, poached eggs and potato hash.


Hu is HUON?

Suppliers of our menu’s Ocean Trout, Huon Aquaculture Company, have been farming fish in the beautiful waters of Tasmania since 1988. What began as a diversification to the family cattle and sheep farming enterprises has grown into a business that relies on farming with care, precision and with quality always at the forefront of everything it does. It is this commitment to quality and innovation that sees Huon raise some of Australia’s freshest fish. The company is also the only food company in Australia to show a sustainability dashboard – your fish doesn’t get better than this!


What does sustainability have to do with food?

Sustainable agriculture is a way of raising food in an ecologically and ethically responsible manner taking into account environment protection, the safeguarding of human health and fair treatment to workers. Huon’s fish are harvested at night, as this is when the fish are most relaxed. A conscious effort is also placed on the fishes’ diets – ensuring the fish have enough energy to live and thrive and also have the nutrients (proteins, fats, vitamins and minerals) to grow. What’s that? Food has more to do with sustainability than you thought?
